


PAGO DE CIRSUS
Located in Ablitas, southern Navarra, Bodega Pago de Cirsus is a single-estate winery that encompasses vineyards, a winery, a boutique hotel, and a gourmet restaurant. Established in 2002 by Spanish film producer Iñaki Núñez, the estate spans 200 hectares, with 136.7 hectares dedicated to vineyards planted in 2000. The winery achieved the prestigious D.O.P. Pago status in 2014, the highest classification in Spanish wine law, recognizing its commitment to quality and terroir expression
Situated at an altitude of 395 meters, the Bolandín Estate benefits from an extreme continental climate characterized by cold winters and long, dry summers. The vineyards are planted with carefully selected grape varieties, including
Chardonnay, Moscatel de Grano Menudo, Cabernet Sauvignon, Merlot, Syrah, Tempranillo, and Garnacha. Cultivation practices focus on low yields (not exceeding 6,000 kg/ha) to ensure concentrated flavors and high-quality grapes.
The estate employs sustainable viticulture techniques, including drip irrigation supported by a 300-million-liter reservoir and soil moisture sensors to optimize water usage. Harvesting is done by hand, with white varieties picked during the cooler night hours to preserve their aromatic qualities.
The winery itself is a state-of-the-art facility that utilizes gravity-flow processes to minimize grape handling. Under the guidance of head winemaker Jean-Marc Sauboua, who brings experience from Château Haut-Brion, the wines are crafted to reflect the unique terroir of the estate.
In addition to its winemaking operations, Pago de Cirsus offers enotourism experiences through its on-site boutique hotel and gourmet restaurant, providing visitors with an immersive experience into the world of wine.
